Refined Sugar-free Chocolate Mousse Pudding

I’m Jennifer Zee and am thrilled to be a part of the Simple Eats Blog! A bit about me, I have worked as a fitness model, fitness competitor and stylist and have obtained numerous health, wellness and fitness certificates including CrossFit Coaching, Olympic Weightlifting, Movement & Mobility, Muscle Activation Techniques and a certification in Plant Based Nutrition from eCornell University.

After years of suffering from intense ‘stomach’ pain, I was diagnosed with endometriosis and was able to take complete control of my health, get strong, and achieve a state of well-being that I didn’t think was attainable.

Nearing 40 years old, I have learned how to empower others’ and myself through hard work and dedication to fitness and diet.  I know first-hand how plant-powered foods can improve everything from unbalanced moods, poor performance in the gym, low energy levels, and illness.  My only mission in life is to share my story and connect the power of plants to being powerful across all areas of your life.

Over the past few months I have been working tirelessly to create an online summit with 20 plant-based experts ranging from professional basketball players, to world-renowned cardiologists and nutritionist to name a few, to help change the way people eat to increase productivity, have more energy, be more engaged with friends and family members, overcome health and wellness issues and maximize their life in all other areas.  Throughout the creation process I had to come up with some quick, simple and nutritious meals and snacks to help me push through long and work intensive days. My Refined Sugar-free Chocolate Mousse Pudding has literally saved me from hunger pangs time and time again and has become a staple in my home ever since!

 

Refined Sugar-free Chocolate Mousse Pudding

Serving: 4-6 small mason jars

Ingredients:

½ cup chia seeds

2 cups unsweetened coconut milk

2/3 cup Aquafaba (This is the liquid in a can of chickpeas)

1 cup cacao

2 pitted dates

1 banana

5 raspberries

 

Instructions

1. Combine and stir unsweetened coconut milk in with the chia seeds and refrigerate overnight.

2.  In a blender (I personally love my Vitamix), combine Aquafaba, cacao and dates and blend on low until mixture is fluffy

3.  Fill 2/3 of mini mason jar with refrigerated chia mixture

4. Top with fluffy cacao mousse, bananas, and raspberries

5. Enjoy and refrigerate the rest!
