 1 large head cauliflower, cut into florets
 1 vidalia onion, chopped
 2 cloves garlic, chopped
 1 ½ tsp sea salt, divided
 ½ tsp pepper
 2 tbsp olive oil OR ghee
 4 cups Vegetable or Chicken Broth (I used Imagine No Chicken Broth)
 1 cup water
 ½ cup raw cashews
 2 tbsp chives chopped (optional)

In a large pot, sauté onions and garlic in olive oil/ghee over medium-low heat with a dash of sea salt. Stir every couple of minutes for about 10 minutes.

Add pepper, broth, water, cashews, the rest of the salt, and cauliflower. Cover and simmer for about 20 minutes or until cauliflower is soft.

Transfer to a blender. (I used a Vitamix, but you can use any blender or an immersion blender.) Taste for seasoning and adjust. Add chopped chives as a garnish.
