Japanese Sweet Potato Oven Fries

Did you know that Japanese Sweet Potato keeps wrinkles away… well according to the New York Post it does. That’s not all, it’s high in antioxidant and makes a delicious substitute for regular potatoes due to the lack of nightshade alkaloids. The component that has been linked to allergy symptoms. This is by far one of my favorite sweet potatoes and I enjoy eating them with my wife while at home as we catch up on our favorite Netflix shows. So if you’re craving french fries (like I do) this will be a healthy option for you. Enjoy and let me know what you think Simple Eaters.

Yields: 4-6 servings

Ingredients:

3 medium Japanese sweet potatoes wash, scrub, & cut into 1/2 inch thick matchsticks
3 – 4 Tbsp Olive oil (or your choice)
2 Tbsp Sesame Seed Mix
Sea Salt for taste

Instructions:

Preheat the convection oven to 415 degrees.

Place the sweet potato on a large sheet pan, drizzle with oil, add the sesame seeds, and salt. Toss well until fully coated. Make sure they’re spaced out to assure it will cook evenly.

Bake for 15-20 minutes or until golden, they should be soft in the middle and slightly crispy on the outside.

Serve the sweet potato fries with your favorite dip, hummus or by itself because it’s that good!

Note: Half way through the cooking time, remove from the oven and reorganize the sweet potato matchsticks by gently moving them around and flipping them over. This will help with cooking them evenly and prevent over cooking, especially the ones on the outer ends of the pan.
