Coconut Trail Mix for the Simple Eater

It’s officially fall and I am diving into my favorite hearty recipes which includes hearty healthy snacks. I don’t know about you, but I have to be careful when I snack on nuts. The crunchy, salty, satisfying way about them makes it hard to stop. I remember back in the day, I could easily go through a tub of trail mix from Costco in a week or less. I’m sure the M&M’s inside didn’t help.

These days I take a much healthier approach to my consumption of nuts and trail mix and try really hard to find ones that have really simple ingredients and that can fit in with my real food based, low carb lifestyle. I started making this coconut trail mix for my Whole30 clients as a way to help them add healthy snacks in their program and it’s definitely become a favorite.

This coconut trail mix uses few ingredients and has a light coconut flavor without any sugar or fruit.  Feel free to play around with the combination of nuts and add-ins as you please. This can be made in large batches and is perfect to bring along for healthy travel or to have as fuel for intense physical activity. Also can be eaten just because it’s delicious!

Pumpkin Spice Pecans

Instant Pot Buffalo Wings

5 Ingredient Vegan Buffalo Dip 

COCONUT TRAIL MIX

Ingredients

2 cups Almonds
2 cups Cashews
2 cups Pecans
1 cup Coconut Shreds
2 tbsp Coconut Oil (melted)
1 tbsp Cinnamon
2 tsp Sea Salt

Instructions

1. Preheat your oven to 350
2. Add all ingredients to a large bowl and toss together until fully combined.
3. Place mix on a large baking sheet and spread out in one layer evenly.
4. Bake trail mix for 10 minutes, toss and bake for another 5-10 minutes.
5. Let cool and dry out completely before serving and storing
